There are numerous energetic influences that cause water to organize, but the degree to which the water is coherent determines how long it will stay organized.

In quantum physics, the term "coherence" is defined as a "fixed phase relationship" between waves, particles or molecules. In other words, whatever is happening in one area of a system is happening simultaneously in all other areas of the same system. For water, that means the molecules move together, turning and spinning as "one." In a coherent system, things tend to stay organized for longer periods of time.
It is quite well known that MRI (Magnetic Resonance Imaging) uses strong magnetic fields to organize the water in the human body. When the magnetic field is turned off, the period of time it takes for water molecules to return to their original orientation is tracked. This is called the "relaxation time." MRI provides useful information about the degree of organization of the water in the body, which can be correlated with a number of health parameters.

Relaxation times for healthy tissues are much shorter than those of diseased and cancerous tissues.
MRI is a perfect example of what happens when water is no longer under the influence of a magnetic or electric field it generally loses its organization. However, when the system is coherent (for example: the water in a healthy body), organization can be maintained for longer periods of time. Relaxation times for healthy tissues are much shorter than those of diseased and cancerous tissues, indicating that the water is organized and has the ability to return to its original orientation much quicker than the disorganized water of diseased tissues.
When coherence is established in water, not only is it hexagonally organized, it is in a more stabilized state of organization and less prone to structural deterioration. This has huge implications when you consider that the organization of the water in your body can be correlated with either sickness or health. Modern methods of creating hexagonal water have found ways of establishing coherence in the water. This means that it can be quite stable.
Of course, some methods of making hexagonal water are better than others and the water from each is somewhat different with varying levels of coherence.
